Mini Apple Pies

So, one of Tony's favorite desserts is apple pie. The other day, I was craving something sweet and looking at what we had leftover in the fridge. I saw apples and and thought of this sweet, cinnamony, apple goodness that is straight from the South. I found this recipe  and put my own twist on it, based on the ingredients that I had around the kitchen. You can double or triple the recipe based on your needs. I only made 9 mini (cupcake size) apple pies. They are the perfect portion size and satisfy that sweet tooth. 

Ingredients:

For the Apple Mixture
3-4 Granny Smith Apples would be ideal, but I only had 1 largeGolden Delicious and it was still yummy!
1/4 cup white sugar
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon cloves (or less)
Vanilla Ice Cream


For the Pie Crust:
1 cup flour
1 teaspoon salt
2/3 cup butter
5-6 tablespoons cold water (add based on the mixture)

Preheat the oven to 425 degrees.
First, cut the apples into very small bites/ slices.
Next, start making your pie crust! Add the flour and salt. Cut the butter into the mixture with a knife. Add the water slowly and use your hands to knead the mixture into dough. If you need more water, add accordingly. Add more flour if necessary. The mixture should be not be sticky or crumbling. It should have enough water to be moisturized feeling and enough flour so that the dough doesn't stick to your hands.
Make sure you use a rolling pin to flatten your dough! It should be 1/2 inch thick or smaller.
Next, use a glass (or biscuit cutter) to cut circles in your dough. Keep pressing the mixture back together when needed.
Fill a muffin/ cupcake pan with 9 cupcake liners. Take your circle cut dough and press it into the cupcake liners. Use your fingers to round the edges and create a pie-crust appearance.
Next, mix together the sugar, cinnamon, nutmeg, and cloves with the apples in a mixing bowl.
Take the apple mixture and evenly distribute it among the 9 mini pie crusts.
Now, with your leftover dough, flatten it with a rolling pin and cut it into strips.
Next, add the strips across the little pies to create a crisscross strip crust appearance! Now, put the mini apple pies in the oven on 425 degrees for 25 to 30 minutes.
Make sure they are golden brown on the crusts before you take them out! Wait until they cool and then take off the cupcake liners. They will make your kitchen smell so good :)


Don't forget to add Vanilla Ice Cream. One of my favorites is Dreyer's Slow Churned Rich & Creamy Vanilla Bean. Mmm... enjoy!
