Pink Champagne Cupcakes and Cheers to 2016!

For New Year's Eve this year, we helped put on a 20s themed Gatsby-like party. I made some pink champagne cupcakes that I thought really fit the theme. Super easy to make. My roommates in college used to make these and they are SO good. 

I thought I would share the recipe and hopefully inspire you. Cheers to a goal-setting, hard-working, continuing after failure, fulfilling, loving who you are but pushing to be better, community and friendship filled, fun, striving after Christ 2016.

No to Resolutions and YES to more cupcakes I say.



Pink Champagne Cupcakes

Ingredients

Cupcakes
1 box white cake mix
1 1/4 cups champagne
1/3 cup vegetable oil
3 egg whites
4 to 5 drops red food color 

Champagne Frosting
1/2 cup butter or margarine, softened
4 cups powdered sugar
1/4 cup champagne
1 teaspoon vanilla
4 to 5 drops red food color

For Fun
You can add pink pearls or decorating sugar. I found this silvery "edible food spray" that sprays like spray paint and I think it turned out wonderfully. Fun and different!

Directions
1. Oven at 350 degrees. Cupcake liners in pan or grease pan.
2. Mix dry cake mix and champagne. Add oil, egg whites, and food color. Mix for 2 minutes. Divide among cupcake cups. 
3. Bake 17-22 minutes. Cool.
4. Beat frosting until smooth. Frost cupcakes and garnish! Ta-da! :)
